The Most Two Types Of Healthy Cambodian Food

This is the two most healthy food in Cambodia :

1. Pork Soup with Ginger

Ingredients

50g pork,

sliced thinly 50g pork intestine 50g pork liver,

sliced thinly 50g pork kidney,

sliced thinly 50g pork heart,

sliced thinly 40g young ginger,

julienned 10g dried shrimp 10g dried squid,

soaked and sliced 1/2 onion,

sliced 1/2 potato,

sliced 5 garlic cloves, chopped

1 tbsp salt

1 tbsp white sugar

2 tsp fish sauce

1 tsp black pepper

4-5 cups water and parsley leaves for garnishing

Method

Pour vegetable oil into pot over the medium heat when hot put chopped garlic and fry until golden then add sliced meat, heart, liver and intestine, but save sliced kidney for later. Stir-fry them in half done. Then pour bubble water into pot, add dried shrimp, dried squid, season with salt, fish sauce, sugar and m'sow! soup. And then add sliced onion, ginger and kidney, let it stand over the heat about one or two minutes, and then remove from heat. Lastly, sprinkle black pepper and garnish with parsley leaves and serve immediately.

2. Stuffed Biter Melon

Ingredients

2 medium side bitter melons

200g minced pork

30g dried shrimp, soaked and chopped

6 garlic cloves, chopped

1 tbsp soybean sauce 1 tbsp fish sauce

1 tsp black pepper, pounded

2 tsp white sugar

3-4 cups pork stock

Method

Cut bitter melon into 2 or 3 pieces and remove seeds off. Then soak in the salt water to reduce the bitterness of it, but not too long. Chop pork with dried shrimp, garlic and black pepper when smooth remove into a bowl and mix with soybean sauce, while also pinch salt and sugar into it, mix well. Drain bitter melon then use spoon to stuff minced pork mixture to the loaf of bitter melon, and bring to boil in the pork stock over the heat about 10 minutes or until cooked, then remove from heat. Being sure season with fish sauce, salt and sugar. And lastly garnish with sliced spring onion and parsley leaf.
